  1. In a container add maida,wheat flour,sooji,carrom seeds, salt & oil. Knead the atta with oil and then add water gradually
  2. Rest the dough for at least 30 mins
  3. Divide the dough in 4 portions. Roll one portion in round shape.
  4. For twisted nimki - cut the roti vertically in strips and take 4 strips and twist & roll them in flower shape
  5. For kaju shape - Roll one portion in round shape,then with the help of a bottle cap cut them into kaju shape
  6. For star shape - I have used a cutter
  7. Diamond Shape - You can cut the roti in diamond shape with the help of a knife
  8. The nimkis/namkeens need to be fried on a low flame. You can sprinkle some rock salt after the nimkis are fried.
  9. Crispy nimki platter is ready to be served
