Boondis are small round shaped deep fried balls made from gram flour or besan. It can be used to make different recipes like sweet boondi, boondi raita and home made namkeen/mixture. For preparing Namkeen or Khara boondi, the chickpea flour batter is mixed with spices and salt before frying then batter is passed through a filter spoon which helps to shape the boondi round like a pearl. The spiced batter is directly poured into the hot oil for deep frying which is later mixed with fried curry leaves.
To get started with this recipe, we have to prepare a few components. You can cook besan namkeen boondi using 6 ingredients and 5 steps. Here is how you can achieve it.
The ingredients needed to make Besan Namkeen boondi:
- Take 2 cup Gram flour (besan)
- Take 1 cup water
- Make ready 1/2 tsp salt
- Take 1/2 tsp Red Chilli Powder
- Make ready 1/8 tsp baking soda
- Prepare As needed Oil for fry
Combine the besan, salt and approx. ¾ cup of water in a deep bowl and mix well using a whisk. Add the oil and mix well. Heat the oil in a deep non-stick pan and pour a ladleful of the batter at a time over a large round perforated spoon (boondi jhara) so that boondi drops in the oil and deep-fry on a medium flame till they turn crisp. For North Indian style boondi namkeen, take the remaining half of the cooked boondi, roasted nuts, add red chilli powder, dhania powder, cumin powder, amchoor powder, chat masala and sugar, salt.
Instructions to make Besan Namkeen boondi:
- First take a bowl prepare better add gram flour, red chilli, salt, baking soda,water mix well.Make a thick better like a dosa better.Make sure no lumps in it.. And stur it 10 minutes
- Then cover it and leave it for 10 min on room temperature.
- Then heat a wok in oil.Take multiple hole Spatula and pour the better slowly slowly.pour 2 to 3 tbsp wherever drops separated.
- Then fry till golden brown..Take out on tissue paper.
- Your boondi is ready to used in raiyta and chaats..and you can also store it.for 1 to 2 months.

Mix well with a ladle and Set aside. Store in an air tight box after the mixture cools down completely. In a mixing bowl, add besan/chickpea flour, chilly powder/paprika, asafoetida, salt, and oil.
